Mini rice-cake stacks
are simple to make, healthy, filling and yummy enough to leave you and your kids coming back for seconds.
• 8 mini apple-cinnamon rice cakes (switch up the flavors to find your personal favorite!)
• 1 ½ tablespoons natural peanut butter
• 4 banana slices
Now comes the fun and easy part – simply spread half of the rice cakes with the peanut butter, top that peanut butter with a slice of banana, and then finish it off by topping the banana with another rice cake. These “stacks” can easily be made ahead of time and stored in the fridge, bagged up and packed in your kid’s lunchbox, or eaten right away!
