Begin to prep at least 24 hours before cooking to allow the honey mustard sauce to develop its flavor. Once the time is up, fire up the grill and get to cooking!

Meyer Lemon- Honey Mustard Sauce:

  • ¼ cup of Dijon mustard
  • 1 heaping tablespoon clover honey
  • 1 tablespoon fresh orange juice
  • 1/2 tablespoon of lemon zest
  • 1 teaspoon fresh Meyer lemons, if possible
  • Salt and freshly ground black pepper

  • 1 ½ pound of 90-percent lean, freshly ground turkey ( not all white meat), chilled
  • Salt and freshly ground black pepper
  • 8 slices of goat cheese, sliced ½ inch thick
  • 4 sesame seed hamburger buns, split and lightly grilled
  • Watercress for serving

  1. For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, and season with salt and pepper.
  2. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  3. For the burgers: Preheat the grill to high.
  4. Form the meat into four 6-ounce burgers.
  5. If you are not going to cook them right away, store them in the refrigerator.
  6. Sprinkle the burgers on both sides with salt and pepper.
  7. Grill until cooked through, 3 to 4 minutes on each side.
  8. During the last minutes of cooking, add 2 slices of cheese to each burger and cover the grill and let the cheese soften slightly. (Usually about 1 minute)
  9. Put the burgers in the buns and drizzle with some of the Meyer lemon-honey mustard.
  10. Top with a few sprigs of watercress and serve with a little bit of mustard on the side.
