You won’t believe how easy these noodles are! Perfect for a simple summer dinner, this quick meal comes together in just 20 minutes!
We ditched the pasta for a bowl of spiral zucchini noodles topped with fragrant walnut oil, and heady garlic.
Using a spiral vegetable slicer, cut two medium zucchinis into long, thin strands. Then, cut through the noodles with kitchen scissors.
In a large skillet, heat two tablespoons of walnut oil over, medium high heat. Add six cloves, of smashedand halved garlic. Cook and stir until the garlic just begins to brown.
Next, add the zucchini to the skillet. Cook and toss for one minute, then transfer to the serving bowl.
Add a half cup of walnuts to the skillet. Cook until just toasted. Then add them to the zucchini. Add a half teaspoon kosher salt, and a quarter teaspoon crushed red pepper. Toss the mixture to coat, then set aside.
Next, heat one tablespoon walnut oil in a skillet. Add four slices of torn pancetta or prosciutto, and cook until crisp. Add the pancetta to the zucchini mixture along with green apples and toss. Top with goat cheese before serving.
