The thought of the kids going back to school may sound exciting, as parents all over the country try to remember what it is like to have a quiet and clean house for a few extra hours a day, but before you get too excited, remember everything that comes with back to school time. In addition to relaxation, it also means packing lunches, making nutritious, filling and tasty breakfasts, as well as afternoon snacks, all before dinner-time rolls around. Below is a perfect snack that can double as part of your children’s lunch, as well as an afternoon snack.
Mini rice-cake stacks are simple to make, healthy, filling and yummy enough to leave you and your kids coming back for seconds.
Ingredients
- 8 mini apple-cinnamon rice cakes (switch up the flavors to find your personal favorite!)
- 1 ½ tablespoons natural peanut butter
- 4 banana slices
Preparation
Now comes the fun and easy part – simply spread half of the rice cakes with the peanut butter, top that peanut butter with a slice of banana, and then finish it off by topping the banana with another rice cake. These “stacks” can easily be made ahead of time and stored in the fridge, bagged up and packed in your kid’s lunchbox, or eaten right away!
